Homemade Granola

Nate & I eat this for breakfast almost every morning. It's SO good! It's great dry, with milk, or mixed with yogurt.

4 C. regular rolled oats
1 C. unsweetened coconut
1/2 C. chopped nuts (almonds or pecans are best)
1/4 t. salt
1 C. dried blueberries, cranberries or raisins
1/2 C. olive oil
1/2 C. honey or real maple syrup

1. Toss dry ingredients
2. Stir together syrup or honey, oil and salt
3. Pour oil mixture over dry ingredients and stir
4. Spread in a jelly-roll pan
5. Bake at 325 for 30 minutes, stirring halfway through
7. Cool, and store in a jar
